Oil disposal
Removal of oil from fryer at end of its useful life, usually with a shortening disposal unit.

Oil filtration
Extends the life of oil by filtering out carbon deposits, food particles and fatty acids.

Open-pot
Fryers with heating surfaces outside the fry pot and deep sediment zones. They work well with light to medium battered foods like French fries and are generally the easiest to clean.
