Male thread
Mainly on sinks and faucets, the component with the grooves on the outside has a male thread. The component with the grooves on the inside is the female thread that will fit with the male threaded component.

Manual pump
A component of shortening disposal units, the manual pump empties the used oil from the disposal unit into an oil recycling receptacle in fryers.

Master jet burners
Gas burners with multiple orifices that direct the heat onto ceramic plates lining bottom of fry pot.

Melonite
Coating that provides rust protection for metal components, especially on equipment that is often exposed to water, like steamers. Also reduces friction between coated parts.

Melt cycle
Used to slowly melt solid shortening in fryers and helps prevent scorching.

Memory module
Allows the oven or combi-oven remember certain settings and temperatures.

Millivolt control
Just like something you’d have on your oven at home – the knob.

Moisture Separator Trap
Device that removes condensate from steamers while leaving steam in the cooking cavity.

Mounting plates
Metal piece onto which hinges can be mounted. Primarily used on storage and transport equipment.

Multi-computer
Programmable buttons for multiple cook times on fryers.
