LCD (Liquid Crystal Display)
Two sheets of polarizing material with liquid crystal solution between them. When electrical current is introduced to the solution, the crystals align acting as shutters allowing or prohibiting light to pass through. Has almost completely replaced Cathode Ray Tube displays.

LED readouts
Light emitting diode. Miniature light bulb that is more efficient and has longer life than standard incandescent lights.

Labyrinth door
Interlocking, gasket-less, air-tight seal formed between the door and front of a warewashing machine.

Legal for trade
A food prep scale that has been specifically designed and independently tested to perform in commercial applications.

Lexan
A brand of highly durable polycarbonate plastic.

Lime
Mineral deposits left behind by hard water containing calcium or magnesium. Once dry these minerals form a rocklike layer on water contact surface. Also referred to as scale. Lime is problematic, especially in washwashing, ice machines, steam equipment or any other equipment that uses water.

Louvered panel
Panel consisting of narrow openings framed with overlapping slats that allow air and light in while shutting out other materials. Commonly seen on air vent grates and house shutters.
