To not only keep your flatware in service, but also looking its best, it must be washed promptly and maintained properly. Below are the recommended cleaning methods as well as some tips on how to keep your flatware sturdy and shiny.

Use portable racks when bussing from the table

For transport from the table to the kitchen, always separate glassware, dinnerware and flatware. In bus trays, portable racks are great for holding flatware.

Remove food from flatware before presoaking

You can do this with a sponge, a pre-rinse unit or a rubber scraper. Never use metal scouring pads or abrasive pads, as they will scratch the surface of your flatware. Do not let your dirty flatware sit overnight.

Change your presoak solution regularly. Dirty presoak solution will not help you clean your flatware.
Presoak immediately for 10 minutes

Food can damage the flatware and cause corrosion over time. Use a presoak solution in a plastic or stainless steel container. Aluminum and copper containers react badly with the presoak solution and can corrode your flatware. Presoaking for more than 15 minutes is also harmful.

Wash in a commercial dishwasher immediately after presoak

This ensures that the presoak solution does not stay on the flatware for too long. High temperatures are best for flatware, as low temperatures are not adequate for metal supplies. Wash the flatware in their portable racks in 135ºF water. Rinse in 180ºF water.

For hard water, use a softener. The mineral deposits from hard water can damage your flatware and cause it to spot.
Dry immediately after washing

When flatware is dried immediately, it reduces spotting and corrosion. Always dry flatware before storing. Store in a cutlery or flatware holder.

Store flatware in a dry place away from the cooking area

The oils and fumes from the kitchen can cause your flatware to corrode. Keep flatware away from all of this to ensure a longer life for your investment.

Keep a sufficient supply of flatware. To avoid having to use flatware straight from the dishwasher in your dining room, keep enough flatware on hand to supply your rush periods.
